I was wondering about majors and minors. I'm currently in a city system school in New York City, and I'm majoring in Clinical Lab Science, with a minor in Sociology. I'm going to finish my sociology requirements with B+ or higher in all the courses and I was thinking of doing another minor in CompSci. I'm currently a junior.

Does this show diversity/initiative in learning? Or does this look like I'm indecisive with my courses?

Additional majors or minors don't really add too much benefit to an application.

Academic interest need not take place in the form of a double major or minor. I'm taking an additional year of language, math, and political science and I'm not minoring nor double majoring in any of them.

What's the difference between double minoring and a DIY post-bacc.? Because in my head, I see another minor as another step to boost my GPA, and enrich my knowledge/diversify, likewise if I were to build a DIY post-bacc. curriculum.

Adcoms don't care what you major or minor in, only that you do well.

A DIY post-bacc is to raise your GPA, or take pre-recs if you did not do them during your normal undergrad. Note that a post-bacc is done after you graduate.

Another minor would be done before you graduate, but doesn't add anything to your application (it does have the potential to change your GPA, true), and no one will care about your minor after you graduate. If you want to take CompSci courses, by all means, do so. If you earn enough credits to get a minor, sure, take it.
