Concurrent enrollment??? LORs? Help!!!

I'm working on doing a DIY post-bac and I'm not sure how to balance needing to get stuff done, getting letters of rec, expense, etc. For background, I recently graduated from a large state school/public ivy with Bachelors in psych and interdisciplinary studies. I did well (3.98 gpa, tons of research experience, a couple of academic awards), but I took pretty much 0 science classes. I am starting my Masters degree in genetic epidemiology next fall and I am hoping to spend this year working, getting clinical experience and working on my prereqs. I hope to apply to med schools in June 2022. I have a couple of different potential plans would love some advice on how to go about doing it. I really need to work and my undergrad school's schedule is completely incompatible with work (I have been offered a full-time scribe job).

PLAN I: take all prereqs at my undergrad school. Pros: good school, letters of rec, could potentially apply for undergrad internships b/c still a student at the same school. Cons: expense, inflexible schedule, time (would take forever!!!), have to turn down scribing job
PLAN II: take all prereqs at UNE online. Pros: can finish everything quickly re: self-paced, leaves more flexibility for work, still 4yr/accredited institution. Cons: online (although with COVID a lot of us are going to have online credits for who knows how long), maybe harder to get LOR, expense.
PLAN III: take my prereqs at a mix of CC, UNE, and undergrad. I would probably enroll in chem at my home school and concurrently take the rest at UNE. Pros: LOR, maybe save some time. Cons: seems like it would look really bad to take things all over at the same time?

Basically, I would love it if someone could verify that UNE wouldn't look too bad/LOR may be accessible because I would love the flexibility. I will have great non-sci letters of rec, but I know those 2-3 letters matter too.

Also -- I am hoping to stay in state (TX) for med school and I know TX schools are generally ok with online prereqs, which would be helpful.
