On my AACOMAS application I listed a contact that just recently left an organization I volunteer for. With that, her contact info changed. Is it worth calling the schools I'm complete for to let them know and possibly provide a new contact if needed?

No, just leave it. The schools will reach out if they ever need new contact information (and it will likely only be the school you matriculate at that will do this later).
