I'm thinking taking the pre-reqs online, does it matter how many courses are taking at the same time?

You should take them all at the same time. All 40+ credits of prereqs. Online. In the same semester.

Meanwhile I'm going to increase my max squat 200 lbs in one week using FILA's toning resistance tight capri pants.
 
If you're still an undergrad student, i suggest you take a full course load. Unless you are working 2 different jobs, supporting a family, etc that is the only time i see it being ok taking less than full time (12 semester hours). Also, some institutions say that they don't take pre-reqs taken online, so if your transcript lists that your course was online, it may not count, just do your research. Good luck.
