Do schools allow you to defer your acceptance for one year to allow you to finish your degree (eg. masters)? All Canadian schools do but I haven't read anything about it in the States.
 
Most nedical schools will not accept you if you are half way through a degree. They tend to be of the policy if you start a degree you have to finish it then you can apply.

You can apply during your terminal year. You don't have to have your degree in hand to apply, you only have to be on track to finish before you start med school. If you don't finish, the medical school will not let you start, usually.

Lost of schools won't defer your acceptance. Instead, register, show up on the first day, then go to student affairs/dean's office/etc. and ask for a leave of absence.
