Can dental assisting be listed as a manual dexterity? I know how to do alginate impressions, pouring models, use the Itero scanner, ortho ligature tie placement, Invisalign attachment placement, etc

Yes, that 100% counts as manual dexterity! I listed a similar experience, since I have 2 years of oral surgery assisting under my belt. I would also list the examples you provided, since it shows that you were physically using your hands.
