I have been looking into a DIY post-bacc but the nearest university requires post-baccs to be "non-degree graduate" students. will the grades I obtain in this way still impact my uGPA if I had to be a "graduate" student? Is AMCAS the one that determines this?

If you take bachelors level courses they should be fine. In my area that's 3000-4000 level.

You need to talk to the people at the university and make sure that the courses count as undergrad courses. They are the ones who would be able to tell you.
