I know that your top 6 Most Important Experiences are highlighted in the application summary, but do admissions/dental schools get to see all the other experiences you listed on the AADSAS?

Yes, I am pretty sure that dental school see all the experiences that are listed but the 6 tagged important experiences will appear first.

Someone sees most of your application but in general I think a lot of people see very little or just the notes on the top of the file lol

pretty sure most people looking will just be skimming, but in theory someone will eventually read your whole app from top to bottom. schools differ in their processes. let's just say it's not very scientific
