So I'm attending a continuing education program for some pre-req credits. I know those credits will be accepted by med schools as pre-reqs but I'm also taking a couple of philosophy courses for my own interest. Will those letter grades for non-prereqs be visible to the med school? Or will they just see what I report for requisites? I do have four years of gpas from my actual undergrad.

Any classes you've taken must be reported with transcripts, so yes they will need your non-pre-req grades reported as well.

You are required to submit original transcripts for all courses attempted. Though, those taken after graduation will appear on their own line as Post-baccalaureate grades. Those grades will then be incorporated into cumulative undergrad GPAs along with your college grades by the application service, which will appear on the line below.
