I have taken the mcat 3x. I applied last year and did not get into medical school. This year my mcat (the third time) is substantially better than previous attempts. Will medical schools avg my mcat scores, take the high, or what? Thanks.

Depends what school. Some average, some weigh heavily on your most recent, and some cherry pick your best scores from each section. Find out what schools you want to go to and find out their policy.
