I read the FAQs degarding lifestyle issues for an anesthesiologist. But I was curious:

Do most anesthesiologists have to work nights and weekends?

For example, can you just compromise with a lower-paying job just so you can avoid working nights and weekends (or at least nights)?

Yes, there are jobs like that out there, specifically many pain and ambulatory surgery center jobs, and some Locums. I suppose some groups might also make that arrangment to have the extra help permanently, but probably would not make you a parnter.
 
Some groups' business models are designed to maximize day work and minimize any late night or overnight call.

If that is your primary criteria in your job search, you just have to cast a wide net to find one like that.
