Question is title. Also, can I consider my job training as when I started the activity? Say training started in april. Can I say the activity started in april then?

If the training included whatever your activity is, then yes. I included my mandatory 100 hours of training as a NA with my hours of clinical experience because I was with patients. If you were in a classroom learning modules, then I'd say no that wouldn't count for hours but would count for starting date.

It's a teaching job and we have to come in for training classes on teaching.
If you list it as Employment, then include that time from the date the training begins. If you list it under the Teaching category, then make the start date when you begin to work with students. AMCAS has both labels in the pull-down menu for categorizing activities.
