So I'm going into my senior year, and I'm thinking of dropping out of the honors college at my university rather than stress about the required thesis. The only time I mentioned the honors on my applications was in describing a program I did through the honors college. If I were to drop the honors college after an acceptance, would medical schools even know? Would they care? Should I inform them before a decision is made?

Agree with @gyngyn ... it doesn't matter.

No one is going to analyze mountains and mountains of transcripts searching for individual "honors" courses taken by every medical school applicant.

We don't care.
So worst case scenario if I don't get in this cycle, you all don't think it would be a huge benefit to have a thesis done or graduate from honors college?

Honors college may benefit you in some way but it does not have an independent benefit for medical school.
