I am a freshman in college and just heard that I may be eligible for a dual-citizenship with Ireland. Would this in any way benefit my chances of acceptance to US med schools?

No, it wouldn't. What makes you think a citizenship to another country would help your chances to US med schools? Now if you wanted to attend med school in Ireland that's a different story...
