Just wondering if it matters if you do an EC activity once or continously? I've been adding everything I do (volunteer, etc) even if it was a one time opportunity.

This should probably be in pre-med forums if you're a pre-med. It would be smarter imo to pick the activities that have meaning to you. Adcoms can usually pick out the people that put filler into their apps.

Would you rather be the guy that has 20 1 hour activities in different soup kitchens, picking up trash/etc, or the guy that has 1 20 hour activity spending time interacting/getting to know each of the residents in the homeless shelter/etc and what their life is like, and how it affects you?

It's about quality and not quantity.

The EC's that I have are meaningful to me. For instance, helping the homeless at church for a day. Drumming in one of the Church bands, etc etc. Although meaningful, I wasn't sure how the duration of these EC's would affect my applications.

Adcoms like to see volunteering done on a constant basis for a decent amount of time. (i.e. volunteering four hours a week for two years at a hospital). Hopefully you have a long-term volunteering gig along with your random acts of kindness.

You might want to consider consolidating them under Church volunteering or w/e group you're doing it with and then in the explain what you're doing in a couple of sentences for it. Or if it's meaningful/relevant to your pre-med path you could potentially make one of the volunteer experiences your personal statement.
