After reading over the chapter I've drawn a complete blank about what the heck is going on.

Unfortunately the test is next Sat so I won't have time to study it more.

So...

Does anyone have any good reminders/tips on electrostatics or on how to condense this material so that I'm at least minimally ready for the questions on the MCAT?

Dipole is basically saying that if you have charges in an electric field that are connected, they will be oriented by the electric field in a position that maximizes attraction to one side and maximizes repulsion from the other side. This sometimes causes the dipolar charges to line up in a straight line kind of like chromatids line up in mitosis. Kaplan has this really descriptive passage about it that goes into WAY too much detail and almost completely confuses the reader.
