extracurriculars for MPH

Are there any particular extraccuriculars that is beneficial for getting into MPH programs? I've heard of internships, but all the undergrad ones are out of my area. Would volunteering and/or shadowing a PH job be good enough?

I'm confused as to how MPH admissions work.

Wow, my state doesn't have any undergrad internships (or at least not any that I could find).
I'm planning to intern at a non-profit this summer and am involved in a couple clubs and volunteering. I'm also thinking about doing Americorps. I hope that's good enough; I don't want to take another year off after Americorps!
