flexibility in research interests-SOP

is it vital to mention flexibility/willingness to contribute to research somewhat related to the research interests stated in one's SOP (i.e., my research interests are flexible and i'd happily contribute to my POI's future related studies)?

Personally, I don't think this is necessary to mention. Presumably your research interests are very much related to your POI's, so unless you already have your entire dissertation planned, flexibility shouldn't be too much of an issue. You can always convey this sentiment on interviews if it comes up.
