G chem question

Hey y'all. Quick question. When you want to calculate bond dissociation energy, for enthalpy (delta H) i have bond breaking - bond making, yet for entropy, i have products minus reactants ( I dont think break - make works here but i may be wrong)

My question is, can delta H be products - reactants for every reaction or do I have to first figure out whats being broken and made?

For me, this is still a question in my head that I haven't cleared up yet. For example, if you look at the review questions for the G-Chem Chapter 6 in Kaplan book, you'll noticed three different enthalpy questions, each using a different type of enthalpy equation...

Look at questions #3, 11, 12, and you'll see what I mean. I'd be stoked if someone could answer this question.
 
Play it safe and think of it in terms of what forms and what's broken. Can't go wrong with that.
