As far as getting into med school is concerned what are all the things you need to do during undergrad? Such as getting a good gpa like 3.7+, shadowing doctors, good letter of recs, what else is needed? If the above are strong do you really need volunteering hours? What else would be needed?

You are essentially asking us to summarize SDN for you. Take some of your time to do your own research. You don't have to reinvent the wheel here. Ask specific questions if you have them, but asking "what's good to get into medical school" isn't a question really worth answering.

All the things you said, and volunteering both clinical and non and research. Spend a couple weeks on this board; then you will know.

Good gpa, good mcat, and good demonstrations of altruism, humanism, and understanding of the profession.

Research, shadowing, clinical/non-clinical volunteering, or holding a leadership position are all good places to start.

check http://www.mdapplicants.com/index.php to give you an idea of what successful applicants did during undergrad. Many people advocate that you do things that are meaningful to you because this would translate into overall happiness when doing an EC, and also when you get to interview, people would be able to tell your genuine interest in the EC.

This is good advice, but take the data with a grain of salt because it's a small set and the applicants themselves are largely self-selecting over-achievers.

Do things that you care about and will be active in. Don't waste your time doing something you hate just to fill a box in your AMCAS application.

This is a bit extreme without context. People could take this the wrong way, I feel like.

Well, that depends if you're a gunner or not.
The typical SDNer has been POTUS, has at least 3 noble prizes, a fields medal or two, been an astronaut cowboy (someone has to wrangle those loose asteroids since Bruce Willis died that Aerosmith movie). Don't mention your gold medals-they're a dime a dozen and just waste space on your application. Also, any research that doesn't result in curing a form or cancer or AIDS, isn't worth mentioning and will just make you look like you're reaching.
Also, make sure you've done something that shows a sense of civic duty/pride. Don't mention being a SEAL these days-everyone's done that. Delta is really what they want to see there. If you've ever saved the world, I'd mention that, but don't be flashy about it. I'd put it in your hobbies section.
Passable LORs would include the Secretary General of the UN, the Pope and Gandhi. Gandhi is preferred, obviously as he is dead and thus more difficult to obtain.

Good luck and let me know how your interview cycle goes!
