Zoo membership if they don't already have one? Or ticket to a special event?
Do they have a favourite animal? Better yet, is their favourite animal endangered? The WWF offers adoption packages where you can "adopt" a species on behalf of someone. A close friend adopted the orca in my name and I received a plushie, certificate and lovely informative poster. It was a very personal and heartfelt present.
Something like the Planet Earth DVD box set or Blue Planet DVD box set would always be appreciated.
Another idea would be to pay for their yearly student membership in any of the wildlife veterinary associations that they might not be members of - great ones that come to mind are the AAZV, IAAAM or AAWV.
