So: I really need to get some shadowing ASAP but I have read the shadowing in Canada is somewhat more difficult. There seems to be less of a culture of it here / more stringent confidentiality requirements. Any fellow Canadian residents with experience in this? I need to shadow!! I asked a friend's sister who is a GP, but she said that due to confidentiality issues it would be impossible. Should I just ask doctors who I see occasionally, like my dermatologist? Help!

You can ask around but more than likely you cannot. Most Canadian applicants in the US don't have shadowing because of this, but do have clinical experience. Canadian-friendly schools will be familiar with this constraint.

Shadowing is tough, I could only manage 10 hours up here. You're honestly unlikely to find anything unless you have physicians in your family, it sucks.
My advice is find clinical experience and direct patient contact in other ways to make up for it.

I'm a US citizen but I went to a Canadian university for undergrad. I was lucky enough that the pre-med clubs at my school had ties with doctors in the area that allowed students to shadow for 1 day. By being nice to the club members (haha), I was able to do a few of 1 day shadowings in various specialties. Perhaps you can check-in with those types of clubs at your school? And if there is no such program, you should totally start one! It would benefit not only yourself, but also future pre-meds.

That part when they told you there was confidentiality issues so it wasn't allowed? They weren't lying.
You also don't need it at all to apply in Canada. I've also known many people apply and get into US schools without shadowing, because believe it or not, they are often understanding that you can't exactly break laws in your country to get shadowing experience
