How does rolling admissions works when you haven't heard from other schools

I've applied to four physical therapy schools. Some don't even have deadlines until Dec 1, while others are rolling admissions. One school I applied to already is having me come in for an interview because they are rolling admissions. My questions are below:
1. If by some miracle I get accepted to the rolling admissions school when I haven't heard back from other schools yet, how much time would the rolling admissions schools give you to accept? Or would you have to accept immediately?
2. If I accept even though I need to hear from other schools, do I still have any chance of still taking my name off the list down the line? (Do they make you sign anything? Or pay money to hold a seat)?

This is all hypothetical. I just want to be prepared in case this situation arises.

Typically there's a deadline for accepting an offer in writing and then further down the line, a deposit is required to secure your seat. Basically, most people will accept the first offer they get if they haven't received any other offers. You can later give up your seat if you get another offer, but obviously any money paid will be lost.
 
If you get accepted to a school you applied to via ptcas the earliest deadline for a deposit is January 15th. So you can wait until that date before you decide to accept and send your non refundable deposit in to hold your seat.

Thanks for your response! Do you know generally how long before a school might get back with you after an interview when they're rolling admissions (I won't know the day of the interview, correct?)? And the way they get back with you (email, letter, call, etc)?

I can’t seem to find exactly where I’ve seen that deadline oddly enough. However, I know I have seen it on Ptcas somewhere, I have also seen many others post saying they have seen the same deadline, and I was accepted to a school with rolling admissions and the deposit deadline for me is January 15th. Sorry I can’t post a link for you.

I was also just accepted to a school with rolling and they said their deadline for the deposit is January 15 as well.
 
Same. However, they do have a tricky line that states your seat is not guaranteed until you have paid the deposit.
