I'd say ~100 hours of shadowing. Any more is probably just going to be a waste of time.
For volunteering, though, get as much as you can without going overboard. I'd say 100 hours is a minimum, and 200-300 hours is probably what I'd aim for.
You want to set yourself up for an acceptance, after all.
