How much is your application processed without a committee letter?

Hi everyone,
I've mentioned that I'm having some last minute letter issues, and so my committee letter isn't done yet. Let's say my primaries, secondaries, and MCAT are in by labor day for the 7 MD schools I'm applying to ( I am also applying DO , but I have more time for that anyway).

How much will my application be processed? I know that you aren't complete without your letters/committee letter/letter packet , and I know you can't be invited for an interview without them. But, when I spoke to admissions person at one of the DO schools I'm applying to, they said if you're secondary is in, and the only thing missing is your committee letter, they will start to process your app. I guess if you're complete besides letters, you're still moving up, compared to if you just have your primary.

Am I delusional? Or is this actually a thing? I'm trying to have that letter in ASAP, but I'm not sure if my committee uses snail-mail or electronic, so that can complicate things.
