There are a ton of opportunities at my school, but I just don't know my different options. Do I volunteer in a lab? Do I get a job doing the grunt work? What even is a thesis? Any help appreciated 🙂

Those options are good ones. If your school has opportunities, apply! And ask questions about what they are doing and why.

What year are you? If you're a first year, it might be really difficult to get a research position right now. It depends on what it's like at your school. My undergrad was a big school, a great research institution, and full of overachieving students and premeds. It made it really difficult to get your foot in the door in a research lab. It might be easier to try to get a job doing grunt work. You can build a relationship with everyone in the lab, ask them questions about their work, and ask if you can tag along to lab meetings. If you show enough interest, it can easily morph into a research role.

If you're a second year or beyond, it might be worth getting in contact with professors who do research you're interested in. Look up some of their recent publications and ask if you can meet with them to talk about their research and the possibility of helping out in their lab/getting involved.

It's definitely worth applying to any research programs your school has set up, but keep in mind that those programs aren't the only way to go about getting experience.

Walk up to a professor you respect and ask for a job in their lab.
