How to get shadowing/research/etc during a pandemic?

So, long story short, I want to apply next cycle. Problem is, the pandemic shafted any possibility of me getting shadowing experience and getting into a research lab. I'm already taking a gap year to apply, and my application is looking pretty bare bones without these ECs. Anyone have advice for how to proceed?
