I have sent out withdrawal emails to the schools I won't be attending, but they haven't replied me back yet...

And it's just me being neurotic, but I was wondering what happens after May 15th. If my school sees other schools names, do they give me 2 weeks to clean things up? That's what AACOMAS guidelines seem to suggest. I wanted to confirm as I couldn't really find much info on this even though I've searched for a while...

I am in the same boat. I just sent my withdrawal emails today so I plan on following up tomorrow (the 16th), when schools are open.

For your case, I'd wait until Tuesday or Wednesday. Give people time to read emails and voicemails.
