I have an interview On WEdnesday of this week!
There I have to write an essay in 20-30 minutes about a topic they give me!

Can you gies throw out some questions that have been asked of you to write on interview day or that your friend had to write about?

I know one has been "HOw do you define professionalism?" and "What is your biggest struggle and tell us about it?"

Two of my interviews asked us to write essays on an ethical dilemma on cheating.

Ok- the whole point of an "impromptu" essay is that you are supposed to be unaware of what the topic is. Do you think it is moral to tell another section of a class what was on the exam? The same logic should apply here. The mods should delete this thread.

I had one 2 years ago that wasn't so serious and another one on racism.

How you answer doesn't matter as much as how you organize your thoughts into a ~5 paragraph essay with a clear intro, body, conclusion.

Look through the interview feedback database. See what others have to say about the essay portion, it might help you. I am sure the essay will change from year to year so don't bother trying to predict it.
