So I had been waiting for my volunteer office to give me official numbers, but it took them awhile and I decided to submit anyway. My total hours have come out a bit inflated.

They said:

A leadership position:

Provided, a lot of stuff, particularly for the leadership, wasn't recorded on their charts and I do believe they have a lower number.

Wasn't trying to inflate or anything, that's just how my total numbers came out when I calculated.

I have a question kind of related to this, where I volunteer you sign up for shifts etc. and check in when you are there and it gets recorded. Sometimes the shifts fill up months in advance but since I have volunteered enough there they still let me come volunteer even if it is filled since I am only one person.

With that being said I can't "check in" since Im not signed up but still volunteer. If say 10 of my hours are "undocumented" but I still put 10 more than the documented amount (to reflect what I actually did) will I get called out on it? Or is it not worth it?

You'll be fine. As long as your numbers are somewhat close to what you actually did I don't think you'll run into any issues. Gross misrepresentation is a bad idea, but that is not what this sounds like.
 
What if you underestimate your hours? Like if I did an activity for 300 hours, but put down 250 hours instead? Or if I did something for 100 hours, I put it as 90? Is this okay?

Yes. I see you're new, so I'll offer some welcoming advice. When people on SDN post extremely neurotic comments (such as yourself), it will almost always be met with extreme sarcasm.

sorry for making a neurotic comment!! i just wasn't sure whether underestimating my hours by a little would hurt me haha
