So I'm sending a thank you email. Should I address him by his last name? (For example, Dear Mr. _____,) Or should I address him by his first name? (Ex. Dear Jim,). Because to me it kinda feels weird calling him Mr. ___, but it also almost feels slightly disrespectful calling him Jim after he interviewed me.

Well, did he introduce himself to you as Mr.____ or as Jim? Don't overthink it.

Pretty sure he introduced me by his first name, but I can't remember to say for sure lol.

No one cares about things like this. He will likely delete the e-mail immediately or send a very brief response. If you're that worried about it, just don't send anything at all. No one cares about this sort of thing.
 
I thought you were already accepted to a school you are satisfied with. Why are you worrying about how to address a student in a thank you letter? Why are you concerned about sending one at all at this point?
