Similarly, when I received interview invites it was generally pretty easy to track down dates from November-March or April. Though, if at all possible, it may be wise to try to interview a bit earlier at places with rolling admissions.

Possible? Yes. but at that point spaces have started filling. You also must make a deposit by December 15th for any school you are accepted at earlier than that so by scheduling all interviews as early as possible you are able to make a somewhat informed decision if you are holding multiple acceptances as to which you'd like to pursue. Thus saving yourself a boatload of money in non-refundable deposits.
I had some schools that offered a really tight window of dates, but I never tried to protest or ask for a later date ... so I'm unsure what would have happened.
I moved interviews back when I was applying. I had about four that were very far away and expensive to get to, so I moved them to after the closer schools' interviews (the ones I could drive to and thus afford to go to). I just told the admins that I needed some more time to get money together to get there, and they understood entirely.
