A biotech company has offered me a job as a production lab assistant. My responsibility would be to work with pig and cow blood and use lab equipment to extract stuff from the blood and help make hematology instruments. I am not sure if this is a job that would be looked positively upon when applying to PA or MD schools? I just really don't know.

Is it a good job compared to what?

If you've graduated school and need a paying job and this job uses your skills and pays a decent wage, the adcom won't criticize it. You might want to continue with conical or non-clinical volunteering a few hours per week to show that what you've done in the past is not merely box checking but the beginning of a life-long desire to help people in need in the community and/or to be engaged in helping out in a health care facility.

I would argue any work experience is relevant as it’ll teach you a lot about professionalism.

Previously working in a call center having angry people yell at me did wonders in helping my patient interview skills.

I am just wondering if this is a job that would be looked positively upon when applying for PA or MD schools. Would this be equal to a job as a medical scribe or medical assistant? My concern is because I am not working in an area with patients and they may look at it as if I wasn't my using time correctly. I am currently enrolled in a post bac pre health program after graduating and wasn't sure if this a job worth taking.

Any employment experience is good. But this is in no way anything near a job that has actual patient contact experience.
This.

If you are a career changer and/or have minimal exposure to clinical settings then there are better jobs than this to take while you finish your post-bac work. However, if this pays better, you need to support yourself, and you have time to do volunteer work in a clinical setting, then the practical will outweigh the ideal.

Also, please consider that >60% of applicants do not get in to med school. If you need to work an extra year, or look into the possibility of being engaged in an entirely different profession, does this lab test your interest in a career you might enjoy?
