Of all of the practice questions I have done, I have only answered a couple of questions for why a particular technique was done. Even then, you can usually figure out the answer based on logic and content knowledge. For example, there was a question asking why vacuum suctioning was added to a fractional distillation apparatus when trying to separate two compounds based on their boiling points. You don't have to remember why if you think about it logically and know a little about pressure and boiling point relationships. You know that adding a vacuum to a system decreases the pressure of the system, therefore, lowering the boiling points of the solutions in that system which was the answer.

Whatever you're using for content review should cover all of the basic lab techniques on the MCAT and if you want to know more I would try Khan Academy or just Youtubing it.
