Language learning during a deferred year

Hey SDN, I am fortunate enough to have been accepted to several schools and I am now considering the idea of deferring for a year in order to travel and learn a language (possibly French, Spanish, or Chinese). I was wondering if anyone has any ideas or knows of any programs that would support this sort of thing, which would allow me to be back in the states in time for the beginning of the 2012-13 academic year? I'm looking at things such as teaching english, WOOFing, etc... just seeking recommendations. Funds are somewhat limited but any suggestions are appreciated. Thanks!

I know I'm not answering any of your questions, but, first things first: you'll need permission to defer. I don't think many schools will be receptive to deferments for something you started planning AFTER you've been accepted. Usually deferment is for prestigious applications in progress (Rhodes, Marshall, Truman, TFA, etc.), and unforeseen/significant life-influencing events.

OP, maybe you should consider doing a Spanish abroad program during the summer before you start? I know it takes longer than one summer to learn a language (I have spent several years abroad myself) but Spanish is spoken enough here in the US that if you get a head start abroad you could hone your skills through the inevitable contact you'll have with Hispanics as a health care professional in the US.

Don't do Chinese unless you already have a head start. It takes way more than a year to become usefully proficient.
