I'm a M1, and I am starting to apply for research summer programs. Now since I haven't really had much interactions with the faculty at my medical school, what do you recommend me doing when I need to get letters of recommendation? Would it be okay to use letters from physicians I used to shadow, my old PI or advisor?

You medical school should have a Dean or Director of Medical Research. This is the person who should be making sure that you have what you need for application for research positions and is generally the person who puts medical students in touch with research opportunities. If you are trying to apply to positions without the support of the Office of Medical Research, you may find that you won't get very far.
 
Not many interactions with faculty or none? You don't have to be best buddies. I'm sure you know someone well enough to give you a LOR to do some research - heck I'd recommend pretty much anyone to do research.
