A lot of schools require at least one letter of recommendation from professor / faculty ... well I've been out of school for a while now and don't think I'll be able to get any solid LORs. Would schools accept LORs from non-relative optometrists instead? I've worked for 3 optometrists so far...

How long ago are we talking? If 5+ years, you may want to make sure your pre-reqs will be counted. If less than that, then it should be ok to ask teachers you had a good relationship with to write one for you. One optometrist that helped me out was someone I worked for 4 years ago and she was happy to do it. I'd assume the same concept applies for faculty.
 
All of my pre-reqs are still counted. It's been about 4ish years. I really do not have any professors that I can contact. Faculty members see so many different students within a span of a year that I doubt any of them will remember me. I was working part time as an optician for the duration of school so I was always rushing from class to class or class to work. Kinda kicking myself right now that I didn't try to at least maintain a relationship with one professor. Anyways, I'll contact the admissions department for the programs I want to apply to and see what they say.
 
Maybe contact the schools you plan on applying to and explain your situation, see if they might make an exception.
 
Is there a pre-med or pre-opt committe at the school you went to?
If you go to the pre-med advisor/couselor at your school and explain them your situation, then he/she can write you a letter.
I know atleast one optometry school that accepts one advisor/committe letter in lieu of 3 professor letters..
