Aside from doing coursework to improve my GPA this past year or so, I have also taken up running. I started a few months ago and have since run a marathon and several half marathons and am currently in training for an ultramarathon (50K trail run with ~8000 ft elevation change). Is this something I should/could add to my application of things I've done?

Yeah man, in my interviews most of what we talked about were my non-clinical/non-medical EC's. Everyone shadows, everyone is smart, everyone has awards, everyone is a leader. Give them something to actually talk about.

Would that be something I would put under the experiences section as extracurricular? It seems like they want things that are more structured there, e.g. they ask for the organization and supervisor, etc. Or would it fit better to put it under awards for the races I've finished?

If I recall, when you're describing the type of activity, there's room for "hobby". I would imagine it doesn't require the hour total and contact information.
