This may be me being a little naive, but I'm not sure how LOR's are supposed to be written. I have looked online and seen a ton of 'different' styles and examples. The health professional that I am getting one from wants me to write it and he'll look it over and approve or disapprove. How would I go about doing this?
 
Having the letter writer ask you to write the letter and then have him sign it completely defeats the purpose of LORs IMO. Frankly, I'm not sure what it is with professionals allowing students to shadow them if they are not willing to create and submit a LOR themselves. Ask him again and tell him that the letter is supposed to be confidential and that you cannot know what is inside it. Have him upload it to Interfolio (HIGHLY recommend using Interfolio) because its easy for you, for him, and for the schools.

If he still isn't willing to do that. I would find someone else to shadow. Unless you live somewhere very isolated, there should be plenty of opportunities.
 
Actually by federal law you have the right to read any letter of recommendation. (Unless you sign a form agreeing to waive your right to view it).
