LOR question (waiving rights)

Do schools require that LORs be confidential, and how do they ensure this when letters are sent by mail? I'm not going to be applying to many schools (2, maybe 3), so I would prefer to send the LORs snail mail instead of using interfolio or the like.

Also, what is the consensus on getting an LOR from my A&P instructor at a community college. I realize this isn't ideal, but I got to know the guy really well over two semesters and he will write me an awesome LOR. Whereas my pre-reqs were taken at a university in classrooms with 150 other students and I would only get a "meh" letter from any of those phd profs.

You really want your letters to be confidential as the ones that aren't are generally worthless. A really good letter will address the goods and bads because it shows honesty as well as truly knowing you, and without the confidentiality, a professor can't right whatever he wants, so it has no weight. Generally if you aren't using interfolio or the like, you give the school addresses to your professor and they take care of the rest. 2-3 schools shouldn't be a problem to give addresses and isn't too much of a pain.
