So my freshman year I took a biology course for non-science majors before I had declared a major. I got to know the professor well and believe he would be able to write me a strong LOR. Would this fulfill one of the two science LORs needed for the application cycle, even if it is a letter from a non-science major Biology course?

I'm sure if it's a BIOL class, it counts.
Make sure with AACOMAS.
Even if it doesn't count, it's good to have a LOR from someone who knows you well.
