Ok i know it varies between each med school, but in general how many science lors should we have? If we have 1 science, and one in our major(which is a non-science major), would that be enough or do most med schools require 2 sci. recs?

Many require 2 science recs. Can't say if it's "most" but a significant number do.

Does a rec coming from an engineering professor count as science? I say yes, but what do most med schools think?

I'd say yes. However, some schools have more specific rec requirements (ie two LOR's from a bio, chem, phys, etc professor) But it seems like that would be ok.

Most schools are generally cool about rec letters. To be safe I recommend 2 science, 1 non-science, and then any others from your volunteering, research, or employment experiences. Jefferson is really the only school that is strangely specific about its letter requirements. I hear Wake Forest is a little weird too-they require a special form for your recomenders to fill out.
