I've got a letter of Rec. from my PI and three professors, one of which is my advisor. This will be in a committee letter. Does this seem like enough?

No, you will need 17 additional letters at minimum.

my main goal of becoming a doctor is so I can impress the hot bartender when I save the entire village from the yellow fever

Probably won't help but my school's premed committee requires me to have a letter from my clinical experience, 2 science and 1 non science from faculty members. I feel like it would help if you have a letter from someone not in university like doctor from shadowing, volunteer coordinator, clinical employer.
