So, at what point do you throw your hands in the air and just accept the fact that you just weren't meant to be good at it?
when your lack of ability makes you not want to work on it anymore. I used to play the violin for six years in junior high. I had a natural talent for it, but I didn't want to do the work I would need to do in order to become excellent. So I stopped. My mom was pissed, since she had just dropped a bunch of money we didn't have on my violin, but at least I let her save the money on the private lessons I wasn't working on anymore.
 
I talked acoustic guitars with one guy for about 10 minutes. If you can talk with some kind of knowledge then you'll be good. I talked about my love of open tunings on my 12 string and a brass slide versus a glass amongst other things. I also talked about various tone woods. I have never heard of anyone actually playing. Time is a pretty big constraint.
