I graduated in May and i applied in July and i thought i would be taking some classes in the Fall (right now)' to up my GPA

but i'm not taking any classes and i decided to volunteer abroad, work part time and continue shadowing/volunteering

Are schools waiting for my Fall grades ? is that why i haven't heard anything back ?

probably not. you should call and findout if that is the reason, although i doubt it.
