Been out of undergrad for over a year and do have a non-science LOR; however it is from a past employer, not a school faculty member.

Are schools flexible at all with letting nontrads provide a non-science, non-faculty letter?
 
In for answer also. Does a letter from an advisor qualify? If so you might be able to meet with a premed advisor, have them read over your PS and resume and have them write you a letter.
 
LOR requirements are school specific. Most require one from a pre med committee OR 2 from science professors/1 non science professor (or some similar combination) along with a DO/MD letter. I don't think a letter from an employer will count, but some schools may have a more lax LOR requirement. A letter from a pre-med advisor would probably be fine since it counts as faculty, but it would be better to get a letter from someone who has actually taught you.
 
Always best, IMO, to directly email school admissions and see if this is an acceptable substitution given your non trad status

I think they will be happier to hear your have your sci letters and DO letters
