Does an “official” letterhead matter for letters of recommendation? The dentist who wrote my letter used a non-official letterhead according to Interfolio. He typed the name/address and phone number of the company he works for the letterhead rather than using the “official” logo. I tried asking him about it, and he said he’s not sure how to make it an official one.

If he doesn't have stationery that he uses for his practice, whatever he's done should be okay as long as he signed it and provided contact information in case one has to verify. If he is working for a company, then he may not be able to use official stationery as per company policy. (That is often the case with the military.)
