For shadowing, did y'all create a new "experience" for every shadowing experience or did you lump it all into one shadowing entry.

I made multiple entries for each person/experience.

Multiple entries. Especially since each entry will likely have a different timeline, different hrs/wk etc.

I lumped it into one entry so as not to create the appearance of trying to artificially inflate the number of experiences I had. However if you had significant shadowing experience with one person I might make a separate entry for it.

I did this and then touched upon specific experiences within shadowing for secondaries/my PS.

I might do this as well, I don't wanna waste 5 or 6 entries on shadowing and hit my 15 limit without getting all my other experiences in.
