One late letter of rec?

What happens if I do my application in June and everything gets finished early except for one letter of rec that don't get submitted until, say september? Does that mean my entire app won't get finished/sent out until september?

My professor is traveling and not checking her e-mail. It's been two weeks since she hasn't responded

No, I believe they will still review your application. You can also have that last letter sent electronically through your aadsas portal.
