I was taking the MCAT Assessment and saw that these were previous MCAT test questions. Since almost all of them followed strictly bio, strictly chemistry etc on one passage, is that how it is on the MCAT?

For example, one passage is strictly ONLY chemistry while the next one would be strictly ONLY physics?

Sometimes they overlap. For example, you might get a passage on electrochemistry and they'll ask you to calculate something physics related (like current).
 
While most passages stick to one subject for the most part, it's still very common to see one or two physics questions in a chemistry passage or orgo questions in a bio passage, etc. Sometimes you'll even run into light orgo on a gen chem passage in PS or a physics question on a bio passage in BS.

It's also worth noting that virtually every passage combines multiple concepts so you should be ready for that.
